Does anybody know what turtling is? I've only heard about it once before...

Turtling is the art of defensive battle. A turtle plays it defensively and draws the game out until he has superior strength to his adversary. I do not recommend Turtling as the core of your strategy because it leaves you economically weakened without much to show for it but a defensive military that won't be of much use in the long run.
However, mixing some elements of the turtle into your strategy can be useful, the easiest and most basic of which include researching Attrition and building some forts/towers.
In the late game, one of my favorite defenses is the entrenched Machine Gun with the CEO in support. The extra range means it can outrange most everything, and it barely takes any frontal damage. Back it up with some Heavy Infantry and AA units and you are set to delay the enemy for a time, until they flank you or overwhelm the position.

Agreed. I plan to stay until the last person leaves as well.
